Chickpea Curry

This recipe is great for them days where time is an issue as its quick and easy to make with very little preparation time. Its also high in protein and fibre to help your body get by day to day and is vegan friendly. This recipe can also be twisted to cater for everyone’s taste. 
Ingredients:
1 x onion 
3 x cloves of garlic 
1 x sweet potato 
1 x can of chickpeas 
Seasoning of your choice
1 x vegetable stock cube
200ml coconut milk 
Salt and pepper (optional)
Directions:
1) Pre heat a pan and add the onion and garlic. Cook this for around 2 minutes.
2) Add the diced sweet potato to the pan and cook until soft. 
3) Add the spices (curry powder, paprika etc…)
4) Make the vegetable stock and add this to the pan.
5) Add the chickpeas to the pan and cook for a minute, remember to drain them before cooking with them. 
6) Add the 200ml of coconut milk and the salt and pepper.
7) Grab a spoon and enjoy!
